In other words, to contain the crumbs[bind them up in frosting] so top layers of frosting do not have crumbs. Buddy on Cake Boss calls this dirty frosting. For fondant, it is supposed to make a smooth surface, and I would guess help glue the fondant to the cake. So we are not supposed to glop it on, Use just enough to catch all the crumbs.
